Barbecued steak with blue cheese, garlic and herb butter
Place a knob of this delicious fresh herb, pine nut and blue cheese butter on top of chargrilled steaks for an extra special summer meal. Serve with new potatoes and salad.
Ingredients

- 120g butter, softened
- 30g Gorgonzola or other blue cheese
- 3 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried crushed chilli flakes
- 2 garlic cloves
- 2 tablespoons pine nuts
- Salt and freshly cracked black pepper to taste
- 8 sirloin steaks (around 200g each)

- Preheat the barbecue for medium-high heat.
- Place the softened butter, blue cheese, thyme, rosemary, parsley, dried chilli flakes, garlic and pine nuts into the bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
- Season the steaks on all sides with salt and pepper. Barbecue to desired doneness about 5 minutes per side for medium rare. To serve, top each with about 2 tablespoons of the butter.
