About this recipe: This is a simple, nutritious and delicious meal. Chicken is stir-fried with peppers, black beans and salsa. Serve topped with grated Cheddar cheese.


Serves: 4 

  • 1 teaspoon olive oil
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 2 tablespoons plain flour or as needed
  • 1 (30g) packet taco seasoning mix
  • 450g skinless, boneless chicken breast fillets, cut into bite size pieces
  • 2 teaspoons olive oil
  • 1 (400g) tin black beans, rinsed and drained
  • 125g prepared salsa
  • 120g grated Cheddar cheese

  1. Heat 1 teaspoon of olive oil in a frying pan over medium-high heat until the oil is very hot. Stir-fry the green and red peppers until they start to become tender, about 5 minutes. Set the peppers aside.
  2. Mix flour and taco seasoning in a bowl. Stir in chicken pieces, a few at a time and thoroughly coat with the flour mixture.
  3. To serve, sprinkle each portion with Cheddar cheese.
  4. Heat 2 teaspoons of olive oil in a large frying pan over medium-high heat and stir-fry the chicken until no longer pink and the coating is browned, about 5 minutes.
  5. Stir in the peppers, black beans and salsa. Let the mixture simmer for about 5 minutes to blend the flavours.
