1 green pepper, chopped
1 red pepper, chopped
2 tablespoons plain flour or as needed
1 (30g) packet taco seasoning mix
450g skinless, boneless chicken breast fillets, cut into bite size pieces
2 teaspoons olive oil
1 (400g) tin black beans, rinsed and drained
125g prepared salsa
120g grated Cheddar cheese

Heat 1 teaspoon of olive oil in a frying pan over medium-high heat until the oil is very hot. Stir-fry the green and red peppers until they start to become tender, about 5 minutes. Set the peppers aside.
Mix flour and taco seasoning in a bowl. Stir in chicken pieces, a few at a time and thoroughly coat with the flour mixture.
To serve, sprinkle each portion with Cheddar cheese.
Heat 2 teaspoons of olive oil in a large frying pan over medium-high heat and stir-fry the chicken until no longer pink and the coating is browned, about 5 minutes.
Stir in the peppers, black beans and salsa. Let the mixture simmer for about 5 minutes to blend the flavours.
