Easy Thai Chicken Pizza

    A peanut sauce is spread over a pizza base, topped with chicken, spring onions and cheese, then popped in the oven to bake for 10 minutes. Hey presto! A deliciously quick and easy dinner or snack.

    Ingredients
    Serves: 8 

    • 1 pizza base
    • 200g peanut satay sauce
    • 4 tablespoons peanut butter
    • 220g cooked chicken, cut into strips
    • 120g Italian grated cheese
    • 1 bunch spring onions, chopped
    • 25g bean sprouts (optional)
    • 1 carrot, peeled and grated (optional)
    • 1 tablespoon chopped roasted peanuts (optional)

    Method
    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Preheat the oven to 200 C / Gas 6.
    2. In a small bowl, stir together the peanut sauce and peanut butter. Spread over the pizza base. Arrange strips of chicken on top. Sprinkle the spring onions and cheese on top.
    3. Bake for 8 to 12 minutes in the preheated oven, until cheese is melted and bubbly. Top with bean sprouts, grated carrot and peanuts, if using. Slice into wedges and serve.

    My boyfriend and I loved it! I made it like the recipe asked, except I only used an 1/8 cup of Peanut butter and i added Cilantro with the green onions and chicken. I think the Cilantro made ALL the difference. Sas very good and will definitely make again! ***ammendment We still make this all the time - just wanted to add that we've also used crunchy chow mein noodles as a topping when we didn't have all the ingredients and it's great that way too! Cook up the chicken in sesame seed oil and garlic, sprinkle some toasted sesame seeds on it instead of peanuts and it's really awesome that way, too!  -  03 Feb 2006  (Review from Allrecipes US | Canada)

    Ok. My Husband was a little leary when I said I was trying this recipe, but while I was mixing up the sauce, he said it smelled pretty good. I had 2 chicken breast that I had already been marinated in roasted garlic, I have to say that my husband and my 13 year old son and myself LOVED this pizza!     I used the suggestions of others and cut the peanut butter in half and cooked the chicken with soy sauce and lime, added mushrooms and cilantro to the pizza. I used thai peanut sauce that was "mildly spicy" - it was very good! You definitely need the bean sprouts and carrots on top.
