Hot bacon cheese sandwiches

    These sandwiches are satisfying and delicious. Burger buns are filled with crisp bacon, ham, barbecue sauce, sweet chilli sauce, piccalilli, pickles and cheese, before being warmed in the oven.

    Serves: 32 

    • 20 rashers streaky bacon
    • 1.35kg finely sliced deli ham, finely chopped
    • 2 onions, chopped
    • 125g barbecue sauce
    • 125g bottled sweet chilli sauce
    • 120g sweet piccalilli
    • 120g sliced pickles, chopped
    • 32 slices cheese
    • 32 burger buns, split

    1. Preheat oven to 180 C / Gas 4.
    2. Place the bacon in a large, deep frying pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on a kitchen towel-lined plate. Allow the bacon to cool and chop.
    3. Cook and stir the onion in the bacon fat left in the frying pan until onion is translucent, about 10 minutes. Stir in the bacon, chipped ham, barbecue sauce and chilli sauce until the mixture is well combined. Transfer the ham mixture to a large bowl and stir in the piccalilli and chopped pickles.
    4. Place about 4 tablespoons of ham mixture on a bun and top with a slice of cheese. Close the sandwiches, wrap each in foil and bake in the preheated oven until hot and the cheese has melted, 15 to 20 minutes. Serve hot.

    Oh my goodness! I was so glad to find this recipe! I was born and raised in Pittburgh,PA and this was my favorite childhood recipe that my Mom made for lunch. She died a few yers ago and I never knew how to make them. Now if I could tell the people at the deli counter how to "chip" the ham I'll be in business.
