    About this recipe: These Christmas biscuits are also known as zimtsterne. They are enriched with chopped walnuts and lightly spiced with cinnamon and nutmeg. They make wonderful food gifts.

    Ingredients
    Makes: 9 - 10 dozen

    • 50g unsalted butter
    • 300g caster sugar
    • 2 eggs
    • 1 egg yolk
    • 1 teaspoon lemon juice
    • 290g plain flour
    • 2 1/2 teaspoons baking powder
    • 1 1/4 teaspoons ground cinnamon
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 60g finely chopped walnuts

    Method

    1. Preheat oven to 190 C / Gas 5. Lightly grease baking trays.
    2. Cream the butter, sugar, 2 eggs, egg yolk and lemon juice together until fluffy.
    3. Combine the flour, baking powder, cinnamon, salt and nutmeg. Add the flour mixture to the creamed mixture and stir in the chopped nuts.
    4. On a lightly floured cloth-covered board roll the dough, 1/3 at a time, to 1.5cm thick. Cut with a 2.5cm star shaped cookie cutter. Place dough on the prepared baking trays. Brush the tops with the remaining egg white, beaten until frothy.
    5. Bake at 190 C / Gas 5 for 6 to 8 minutes.
    6. Variations: Food colouring may be added to the egg white used to brush the tops of the biscuit dough. Two biscuits may be put together to form snowflakes with dabs of icing made with 120g icing sugar, 1/2 teaspoon vanilla and 1 to 1 1/2 tablespoons cream.

    Very nice although the mixture was very very sticky!!! Didn't quite make 9 to 10 dozen, only made about six dozen although I used the same amounts written in the recipe but i did use different shaped cutters. However the biscuits were very nice. - 22 Dec 2011

    Very tasty biscuits. Really easy to make, tried the food colouring in the egg white as well and that didn't work that well I would suggest adding the colouring to the dough - 31 Oct 2010
