Roughly chop onion and brown on medium heat on the stove. Chop 1-2 cloves of garlic and add to the pot. Add chicken to the onions and garlic and seal the chicken.
Add 2 stock cubes to the boiling water and then add to the pot, mix in the veg/mushroom soup.
Bake with lid on in the oven preheated oven for 60 minutes.
After 60 minutes, take pot out of the oven and add peeled potatoes and veg of choice. Bake for another 20 minutes, remove from oven onto medium stove, add corn flour and stir until thick; when thick remove from stove and serve.
