Matthew's tuna curry

    A really nice tuna curry made using ingredients you will always have in the cupboard! You could also try this recipe with any other kind of flaky fish or meat!

    Serves: 2 

    • oil
    • 1 baby onion, diced
    • 1 green chilli, with seeds, finely chopped
    • 1 garlic clove, crushed
    • 1/2 - 1 teaspoon ground turmeric
    • 1/2 - 1 teaspoon ground ginger
    • 1/2 - 1 teaspoon ground cumin
    • 400g tinned chopped tomatoes with juice
    • 130g drained tinned tuna
    • 50g fresh tomatoes, cut into 8ths
    • 1 handful fresh coriander (optional)
    • 140g cooked basmati rice (follow packet instructions)

    1. In a large frying pan, put a little oil and heat it under a high heat for a few minutes.
    2. Add the onion, the chilli and the garlic to the pan, and gently heat until the onions are slightly browned.
    3. Add the other spices (turmeric, ginger and cumin) and mix them into the onion etc.
    4. Add the tinned tomatoes and stir into the spice mixture, until the tomato juice is slightly discoloured.
    5. Now add the tuna and the fresh tomatoes and mix thoroughly throughout the curry.
    6. Stir through the coriander, and serve on top of rice.
    7. Enjoy!

    Really surprised, didn't think tuna would work in a curry. Loved it and will definitely be making it again. It has a good kick to it. I live in a family of korma lovers, so I can make this one for myself. Also takes mins to make.  -  08 Aug 2013
