Toss-in Cake

    This is a recipe that Grandma Pratt gave me when I was a new cook many moons ago. It is a good, quick standby fruit cake recipe.

    Serves: 12 

    • 225g (8 oz) self-raising flour
    • 110g (4 oz) caster sugar
    • 340g (12 oz) mixed dried fruit
    • 2 eggs
    • 110g (4 oz) melted margarine or butter
    • 1/4 teaspoon mixed spice
    • 1/4 teaspoon grated nutmeg
    • 1 pinch salt
    • 150ml milk
    • 1/4 teaspoon vanilla or almond extract

    Prep:15min  ›  Cook:1hr30min  ›  Ready in:1hr45min 

    1. Beat all ingredients together for at least 4-5 minutes.
    2. Turn into a prepared 6 inch cake tin.
    3. Bake for 90 minutes on 150 C / Gas 2. AGA - on the grid shelf on the floor of the Simmering Oven overnight or for 3 hours.


    This cake can be made Gluten Free with the substitution of a Gluten Free Self Raising Flour and a tiny amount of Xantham Gum to replace the gluten which has been take out of the flour.

    I have been searching for an easy light fruit cake recipe for a long time. This is it. I made some adjustments, used five spice powder, and soaked my fruit in rum. (Always have some in the fridge in a bottle soaking). Vanilla & pinch of salt was also added. I mixed all the ingredients in my food processor for a few minutes then added the fruit last, then pulsed that in. Yum. This is the best fruit cake recipe I have ever made.
