About this recipe:
This is a recipe that Grandma Pratt gave me when I was a new cook many moons ago. It is a good, quick standby fruit cake recipe.
225g (8 oz) self-raising flour
110g (4 oz) caster sugar
340g (12 oz) mixed dried fruit
110g (4 oz) melted margarine or butter
1/4 teaspoon mixed spice
1/4 teaspoon grated nutmeg
1 pinch salt
1/4 teaspoon vanilla or almond extract
- Beat all ingredients together for at least 4-5 minutes.
- Turn into a prepared 6 inch cake tin.
- Bake for 90 minutes on 150 C / Gas 2. AGA - on the grid shelf on the floor of the Simmering Oven overnight or for 3 hours.
This cake can be made Gluten Free with the substitution of a Gluten Free Self Raising Flour and a tiny amount of Xantham Gum to replace the gluten which has been take out of the flour.
