This cake can be made Gluten Free with the substitution of a Gluten Free Self Raising Flour and a tiny amount of Xantham Gum to replace the gluten which has been take out of the flour.
I have been searching for an easy light fruit cake recipe for a long time. This is it. I made some adjustments, used five spice powder, and soaked my fruit in rum. (Always have some in the fridge in a bottle soaking). Vanilla & pinch of salt was also added. I mixed all the ingredients in my food processor for a few minutes then added the fruit last, then pulsed that in. Yum. This is the best fruit cake recipe I have ever made.
