Cream marg or butter with the sugar until light and fluffy.
Beat in eggs one at a time.
Using a metal spoon fold in the flour, coconut and apple.
Turn into a greased cake tin, smooth the top and bake at 180 C / Gas 4 till cake tests done.
As I have only ever cooked this recipe in an AGA I would recommend that you use your usual cake temperature to cook this but keep an eye on it to prevent burning.
On the grid shelf on floor of roasting oven with cold shelf on second set of runners until golden then transfer the now hot cold shelf to middle of simmering oven, place cake on top and cook until done.
I used this recipe as a base for my apple cake and its so easy to make and really tasty! I loved the idea of using coconut with the apple and it gives the cake a great texture. The gas mark 4 was perfect and it took about an hour to cook through.
