About this recipe: A simple, yet scrumptious salad solution for a buffet or other large gathering. Pre-cooked chicken, celery and pasta are tossed in a fresh and zesty lemon and dill mayo-based dressing. This amount will feed around 40 to 50 people.


Serves: 50 

  • 9kg skinless, boneless chicken breast fillets, cooked, cut into bite-sized pieces
  • 3 sticks celery, chopped
  • 2.25kg penne pasta, cooked, cooled
  • 1kg mayonnaise, or as needed
  • 2 lemons, zest only
  • 250ml lemon juice
  • 2 teaspoons freshly chopped dill

  1. In a large bowl combine the chicken, celery and pasta and toss together. In a separate large bowl, combine the mayonnaise, zest, lemon juice and fresh dill; mix well.
  2. Add lemon dill mixture to chicken mixture and toss to coat. Cover bowl, chill for 20 minutes and serve.
