About this recipe: Sliced duck, sweet caramelised onions, a variety of cheeses and fresh rosemary make a new and adventurous topping for pizza lovers!

Serves: 8 

  • 1 large skin-on, boneless duck breast
  • 1 Spanish onion, sliced
  • 1 tablespoon olive oil
  • 1 or 2 tablespoons honey
  • 225g goat cheese
  • 2 (150g) pre-cooked pizza bases
  • salt and pepper to taste
  • 285g Taleggio cheese, thinly sliced
  • 1 tablespoon fresh rosemary sprigs

  1. Preheat oven to 230 C / Gas 8.
  2. Cut several slits into the fatty skin of the duck breast. In a frying pan over medium heat, fry skin-side-down for 10 minutes. Flip and continue to cook in its own fat for 10 minutes more. Remove from pan. Carefully remove skin using a sharp knife, then slice and set aside.
  3. Meanwhile, in a separate frying pan, cook onions in olive oil over medium heat until soft, about 5 minutes. Mix in honey and continue to cook until brown and caramelised, about 5 to 7 minutes more.
  4. Spread goat cheese evenly over pizza base and season with salt and pepper. Layer with caramelised onions, taleggio cheese, slices of duck and fresh rosemary.
  5. Bake in preheated oven until cheese in centre of pizza is completely melted, about 10 minutes.


Can also substitute in emmental or gruyere.
