    About this recipe: This drink brings back good memories. My catering business served this drink at our very first event. It's lemony, light, tangy and extremely refreshing. Serve over crushed ice on a warm summer's day.

    Ingredients
    Serves: 8 

    • 1 litre boiling water
    • 3-4 sprigs of fresh rosemary or to taste
    • 250ml reshly squeezed lemon juice
    • 200g caster sugar or to taste

    Method
    Prep:5min  ›  Cook:15min  ›  Extra time:1hr chilling  ›  Ready in:1hr20min 

    1. Place boiling water, rosemary, lemon juice and sugar in a large saucepan. Bring to the boil, then simmer for 10 minutes, stirring occasionally. Allow the mixture to cool in the pan before passing through a sieve into a serving jug/pitcher. Refrigerate until needed.

    Cook's note

    If the lemonade is too strong, dilute it with water.

    You'll need to adjust the sugar to your own taste preference; I cut it back quite a bit, since we like the tartness of fresh lemons. In Florida, we drink what some consider "summer drinks" all year, so this will be showing up in this house quite often. Rosemary can be a powerful herb, but it partners well with the fresh lemons in this drink and does not overwhelm. FYI this took 8 lemons. Very nice. - 21 Feb 2015
