About this recipe: I really wanted to taste coconut butter, but I didn't want to part with $10 to have that privilege. This is why this recipe was born. The simple blitzing of the desiccated coconut, creates a wonderful, sweet, coconutty spread that’s like heaven on a spoon.

Makes: 200 g

  • 225g unsweetened desiccated coconut

Prep:5min  ›  Cook:12min  ›  Ready in:17min 

  1. Place the coconut into the bowl of a food processor. Blitz for 10-12 minutes or until smooth, scraping down the bowl if and when necessary. Store in a jar at room temperature. The coconut butter will solidify at room temperature. When you need to use it, gently heat it in a water bath or microwave.
