Place the coconut into the bowl of a food processor. Blitz for 10-12 minutes or until smooth, scraping down the bowl if and when necessary. Store in a jar at room temperature. The coconut butter will solidify at room temperature. When you need to use it, gently heat it in a water bath or microwave.
