About this recipe:
A light low fat sponge - it's up to you what you fill it with but if you want to keep the calories low, serve it low fat yogurt and fruit.
110g (4 oz) caster sugar
110g (4 oz) sponge flour
4 large eggs
- Preheat oven to 180 C / Gas 4. Grease two 6 inch sponge tins.
- When oven is hot, in a mixing bowl beat eggs and sugar until white and creamy. Sift in flour and fold into egg mixture.
- Bake in centre of oven until risen and a dark golden colour, approximately 8-10 minutes.
- When slightly cooled, remove from tins and allow to cool fully on a wire rack
This sponge can be put together with your favourite jam or can be made into a fresh cream and fruit gateau.
