Fat-less sponge

About this recipe: A light low fat sponge - it's up to you what you fill it with but if you want to keep the calories low, serve it low fat yogurt and fruit.

Ingredients
Serves: 6 

  • 110g (4 oz) caster sugar
  • 110g (4 oz) sponge flour
  • 4 large eggs

Method

  1. Preheat oven to 180 C / Gas 4. Grease two 6 inch sponge tins.
  2. When oven is hot, in a mixing bowl beat eggs and sugar until white and creamy. Sift in flour and fold into egg mixture.
  3. Bake in centre of oven until risen and a dark golden colour, approximately 8-10 minutes.
  4. When slightly cooled, remove from tins and allow to cool fully on a wire rack

Tip

This sponge can be put together with your favourite jam or can be made into a fresh cream and fruit gateau.
