Battered courgette flower

    Did you know that the male flowers of the zucchini plant are delicious? These are battered and fried.

    Serves: 3 

    • 12 zucchini flower (male)
    • 1 teaspoon extra virgin olive oil
    • 65g plain flour
    • 2 pinches salt
    • 100ml lager beer
    • 1 egg white

    1. Wash the flowers and dry them. There shouldn't be any water left on them.
    2. Prepare the batter: Mix the oil in the flour. Mix a pinch of salt in the flour. Pour the lager in and mix everything together. Cover with a cloth for rest for 30 minutes.
    3. Whisk the egg white with a pinch of salt until stiff. Fold it gently into the batter with a spoon.
    4. Warm up the oil. Dip the flowers in the batter for few seconds. Remove the excess batter and put them in the pan to fry until lightly golden. Don't let them burn and enjoy them ;)


    You should use the male flower of the courgette (the on that is not connected to a courgette) and you should collect the flower early in the morning when it's not hot yet.
