Doris's homemade tomato soup

    I quickly threw this soup together to satisfy a yearn my hungry husband had this weekend. Very quick, simple and tasty - an advantage if you're juggling a busy family life. Will serve 4 or 2 greedy husband portions. No real cooking skills needed. I hope you enjoy :o) x

    Serves: 4 

    • generous splash olive oil
    • 1 red onion, chopped
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon dark brown soft sugar
    • 1 tin chopped plum tomatoes
    • 600ml (1pt) vegetable stock
    • 198g red lentils
    • 2 tablespoons tomato puree, or to taste
    • 1 handful fresh basil leaves, chopped, or 1 tablespoon dried basil
    • 2 garlic cloves, finely chopped
    • salt and pepper to taste
    • 100ml cream

    1. Heat the olive oil in a saucepan and add the chopped onion, gently frying until golden brown and soft.
    2. Add the balsamic vinegar and brown sugar to the pan and quickly mix together until the sugar has dissolved and the onions have caramelized (be careful not to burn the onions!).
    3. The moment the sugar and onions have caramelized, add the tin of tomatoes to the mixture and stir it all in together.
    4. Now add your vegetable stock, the red lentils, tomato puree and fresh basil, stir and bring to the boil. Once boiling, lower the heat to a gentle simmer, place a lid onto the saucepan and leave for about 15 minutes, stirring occasionally.
    5. Remove from heat, season to taste and add your cream to the soup.
    6. Serve with warm fresh bread or cheese on toast. Yummmm :O) x


    My husband prefers this soup to left chunky but you can put it into a food processor to make it smoother. Adding red peppers in with your onions or sundried tomatoes can make a nice alternative to.

    I was drawn to this soup by the name. Meant to be. This was very easy to make and my hubby loved it too! Thank u. The second time I made this, I added 2 chopped carrots into the soup after the caramelised onion stage and that worked really well.  -  04 Jun 2015
