Cajun chicken casserole

    This casserole has lots of flavour and is colourful. Easy to make for yourself or for a dinner party with your friends.

    Serves: 4 

    • 2 teaspoons Cajun seasoning, or to taste
    • 1 (600g) pack chicken thigh fillets
    • 1 tablespoon sunflower oil
    • 2 peppers, 1 red and 1 green
    • 1 (400g) tin chopped tomatoes, or more if needed
    • 175g frozen sweetcorn

    1. Sprinkle the Cajun seasoning over the chicken thigh fillets. Gently heat the oil in a flameproof casserole dish and brown the chicken on one side for 3 minutes. Turn over, add the chopped peppers and cook for another 2 minutes.
    2. Add the chopped tomatoes, season to taste and bring to a low simmer.
    3. Cover the casserole dish and cook gently for 20 minutes, stirring occasionally. Add the sweetcorn for the last 5 minutes and serve immediately.

    Serving suggestion

    This dish tastes delicious with white fluffy rice.
