Chicken Salad with Lemon

    This chicken salad is wonderful in a packed lunch with crusty bread. It's a rich chicken salad with mange-tout, red onions and crunchy almonds, all smothered in a creamy lemon dressing.

    Ingredients
    Serves: 8 

    • 250ml salad cream
    • 4 tablespoons soured cream
    • 1 tablespoon lemon juice
    • 1/2 teaspoon lemon pepper
    • 1 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 550g cooked chicken, cubed
    • 200g mange-tout, sliced
    • 1 medium red onion, finely diced
    • 55g lettuce, finelly chopped
    • 115g almond flakes, toasted

    1. In a large bowl, whisk together the salad dressing, soured cream, lemon juice, lemon pepper, basil and parsley. Add chicken, peas, onion, lettuce and almonds and stir until evenly coated. Refrigerate until serving.
