Banana spring salad

    A mix of readily available fresh fruit and vegetables. Lettuce, spring onion and bananas are tossed with a creamy lemon dressing.

    Serves: 8 

    • 1 head lettuce
    • 3 stalks spring onions
    • 1 tablespoon olive or any other vegetable oil
    • 2 tablespoons full cream
    • 3 ripe bananas
    • 1 lemon, juiced
    • salt and milled black pepper to taste

    1. Wash the lettuce well in water with salt or vinegar, remove water and roughly chop and put aside.
    2. Roughly chop the spring onions, fry in the oil until soft, add the cream and remove off the fire after a minute; leave to cool.
    3. Slice the bananas and mix with the lemon juice. Mix all the ingredients and add pepper and salt to taste.
