300g frozen raspberries

Mix the frozen raspberries and sugar in a blender until the raspberries are coarsely chopped. While the mixer running, slowly pour the cream in and mix until well combined. Serve immediately or freeze - the ice cream lasts for up to a week.
I did try this but I had to split the quantities in half and do it twice. The frozen raspberries are just too dry to blend all in one go! I did use low fat yoghurt instead and it was amazy!! - 21 Jul 2011
