5-minute raspberry ice cream

About this recipe: A quick method for making ice cream yourself - great fun for the kids, and the best part is you don't need an ice cream maker. You can also use other berries instead of raspberries.


Serves: 4 

  • 300g frozen raspberries
  • 100g sugar
  • 150ml cream

Prep:5min  ›  Ready in:5min 

  1. Mix the frozen raspberries and sugar in a blender until the raspberries are coarsely chopped. While the mixer running, slowly pour the cream in and mix until well combined. Serve immediately or freeze - the ice cream lasts for up to a week.

I did try this but I had to split the quantities in half and do it twice. The frozen raspberries are just too dry to blend all in one go! I did use low fat yoghurt instead and it was amazy!! - 21 Jul 2011
