Fast fish kebabs

    I usually use swordfish, but you can also use any other firm fish. The preparation is super fast, you just have to allot for some time to marinate the kebabs for a few hours.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 clove of garlic, finely chopped
    • 1 tablespoon fresh coriander, chopped
    • 1 teaspoon ground cumin
    • 1 teaspoon lemon juice
    • salt and freshly ground black pepper to taste
    • 750g firm fish fillets

    1. Mix all ingredients together, except for the fish.
    2. Cut fish into 3cm cubes and mix with the marinade. Refrigerate for several hours, turning from time to time.
    3. Grease the kebab skewers. Preheat barbecue or oven grill.
    4. Remove the pieces of fish from the marinade and drain well. Skewer and cook for 6-8 minutes until they are cooked through and lightly browned, remembering to turn and brush with the marinade.
