About this recipe:
These pikelets or pancakes are cooked on a hot griddle or non-stick pan. Nice to make for the kids coming in from school. Top with butter, syrup or jam.
4oz plain flour
2 eggs, beaten
3oz butter or margarine, melted
½ pint buttermilk
- Mix the flour, eggs, melted butter and milk with a fork or a whisk, until there are no lumps.
- Spoon some of the pancake batter (a few tablespoons) into a lightly greased, hot pan; when the pancake starts to bubble, turn it over with a spatula or fish slice.
- When they are cooked, place them on a plate and keep warm in the oven while you cook the remaining batter.
