    About this recipe: You can make all kinds of different muffins with this muffin recipe. Use a simple strawberry jam for a family pleasing classic, or get creative - I tried a peach and amaretto jam, but other flavours of jam taste just as good.

    Ingredients
    Serves: 8 

    • 280g flour
    • 80g sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 egg
    • 240g natural yoghurt
    • 50g butter, melted
    • 1 teaspoon vanilla extract
    • 8 tablespoons jam of your choice

    Method

    1. Preheat oven to 190 C / Gas 5. Place 8 paper cases into your muffin tray.
    2. Mix the flour, sugar, baking powder and salt.
    3. Stir the egg and natural yoghurt together. Mix in the butter and the vanilla extract.
    4. Pour just under half of the mixture into the 8 muffin cases. Add 1 tablespoon of jam in the middle. Put the rest of the mixture on top so that the jam is completely enclosed.
    5. Bake for 30 minutes in preheated oven until the muffins are golden brown on top. Let cool for 5 minutes, then remove them from the muffin tin.
