About this recipe:Nothing tastes better than melted cheese in my opinion - this quick soup is grilled with a slice of cheese at the end, just like French onion soup. This makes a lovely starter in the wintertime.
1 tablespoon butter
3 red peppers, finely chopped
500ml vegetable stock
200g whipping cream
salt and ground black pepper to taste
4 slices Emmental or other Swiss cheese (about 100g)

Heat the butter in a saucepan and saute the peppers over a medium heat. Add the stock and cook for 10 minutes. Add the cream, bring to the boil and season with a little salt, pepper and nutmeg.
Preheat oven grill. Pour soup into four ovenproof soup bowls and top each one with a slice of cheese.
Bake under the preheated grill for a few minutes until the cheese is melted.
