Red pepper soup au gratin

    Nothing tastes better than melted cheese in my opinion - this quick soup is grilled with a slice of cheese at the end, just like French onion soup. This makes a lovely starter in the wintertime.

    Serves: 4 

    • 1 tablespoon butter
    • 3 red peppers, finely chopped
    • 500ml vegetable stock
    • 200g whipping cream
    • salt and ground black pepper to taste
    • nutmeg
    • 4 slices Emmental or other Swiss cheese (about 100g)

    1. Heat the butter in a saucepan and saute the peppers over a medium heat. Add the stock and cook for 10 minutes. Add the cream, bring to the boil and season with a little salt, pepper and nutmeg.
    2. Preheat oven grill. Pour soup into four ovenproof soup bowls and top each one with a slice of cheese.
    3. Bake under the preheated grill for a few minutes until the cheese is melted.
