About this recipe: A very quick and delicious strawberry swiss roll - sponge cake, whipped cream and strawberries, a delightfully light and classic combination. You can use other fruits instead of strawberries when strawberries aren't in season.


Serves: 12 

  • For the sponge
  • 4 egg yolks
  • 110g sugar
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • 25g icing sugar
  • 75g flour
  • 1/2 teaspoon baking powder
  • sugar for rolling
  • For the filling
  • 200g whipping cream
  • 1 teaspoon vanilla extract
  • 500g strawberries, chopped

  1. Line a baking tray with baking parchment. Preheat oven to 200 C / Gas 6.
  2. For the sponge: beat the egg yolks, sugar and vanilla in a bowl until fluffy with a hand mixer. In another bowl, beat the egg whites with the icing sugar until stiff and pour into the bowl with the egg yolk mixture. Mix the flour with the baking powder and sift over the egg whites. Mix everything carefully with a whisk. Don't stir it too much.
  3. Spread the mixture onto the prepared baking tray and bake in the preheated oven for 15-20 minutes.
  4. Sprinkle a tea towel with sugar and carefully invert the finished sponge onto it. Remove the baking parchment, and roll the sponge up and let it cool.
  5. For the filling, beat the cream with the vanilla and mix with the strawberries.
  6. Gently roll apart the sponge and spread with the strawberry-cream mixture. Roll up again in the refrigerator and allow to set.

Very easy method with a great result. More of a sponge swiss roll than a roulade (due to the flour added), but all who ate it enjoyed it! Served 8-10 generous slices. - 18 Aug 2013


Very easy and quick to make. Yes, it is more of a sponge than a roulade, but it was very much appreciated! I added a fresh strawberry sauce and it completed it perfectly. In my case it just managed to serve a decent slice for 9 people, but no seconds..! - 15 Sep 2015
