Five-ingredient cherry cake

    This cake is dead simple with only five ingredients - a cake exactly to my taste (a recipe of my grandmother's, who often made it with gooseberries instead of cherries).

    Serves: 12 

    • 5 eggs
    • 180g sugar
    • 2 1/2 teaspoons baking powder
    • 180g plain flour
    • 1 jar or tin cherries, drained

    1. Preheat oven to 180 C / Gas 4.
    2. Separate eggs. Beat egg yolks with half the sugar until fluffy. Sift the flour and baking powder together and gradually fold into the egg yolks.
    3. Beat the egg whites with the remaining sugar until stiff and fold into the egg yolk mixture.
    4. Pour the mixture into a greased cake tin and spread the cherries over it. Use the stem of a spoon to push the cherries into the mixture. Bake in the preheated oven for 50-60 minutes.
