Beef stew in the slow cooker
This is a delicious and simple slow cooker beef stew. Use cheap cuts of meat to make this an economical meal. There's nothing better than coming home after work to a warming, home-cooked beef stew.
Ingredients
Serves: 4
- 2 medium onions
- 2 teaspoons oil
- 6 button mushrooms, quartered
- 4 medium carrots, peeled
- 250ml beef stock
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dark brown soft sugar
- 2 tablespoons tomato puree
- 600g beef stewing steak
- 2 medium potatoes, peeled

- Turn the slow cooker on to High.
- Slice the onions and brown in the oil in a non stick frying pan, adding the mushrooms when the onions have become translucent and light brown. When the mushrooms have coloured and wilted slightly, tip both vegetables into the slow cooker.
- Cut the carrots in half lengthways, then into chunks 2cm long and add them to the slow cooker. Stir in the stock, Worcestershire sauce, sugar and tomato puree.
- Put the beef on top of the vegetables. Slice the potatoes into quarters and press down the side of the slow cooker.
- Put the lid on the slow cooker and cook on high for 5 hours. About 20 minutes before serving, check to see if the gravy needs thickening. If so, thicken slightly with 2 tablespoons of cornflour, mixed to a thin paste with water.

This makes a very tasty meal. I tried it for the 1st time last week and I'm just making it again because it was so easy and yummy. i found that i needed to add more water at the start of the cooking though. - 07 Jun 2011
Made this today - everyone LOVED it - the beef just fell to bits, it was so tender. The brown sugar & Worcester sauce made all the difference. Added a bouquet garni, freshly ground sea salt & black pepper - will definately be making this again. Thank you! - 07 Sep 2013
I made this today and thought it was lovely, very simple and went down great with my partner and 2 young children. Will definitely make it again. Think next time will use more stock and maybe some sort of seasoning. - 23 Oct 2011
