Anna's favourite chocolate cake

    This chocolate cake recipe is a wonderful celebration cake - perfect for birthdays. Luscious layers of chocolate cake and cream, and the syrup sprinkled over the cake makes it tremendously moist. You can prepare the syrup before you start the cake and let it cool.

    Serves: 12 

    • 4 tablespoons margarine
    • 200g caster sugar
    • 4 eggs
    • 250g self-raising flour
    • 3 teaspoons baking powder
    • 2 tablespoons cocoa (unsweetened)
    • 2 tablespoons drinking chocolate
    • 1/2 teaspoon vanilla extract
    • 4 tablespoons brandy
    • Syrup
    • 125ml water
    • 200g caster sugar
    • 125ml milk
    • Cream topping
    • 500g fresh cream
    • 1 tablespoon icing sugar
    • 1/2 teaspoon vanilla extract
    • glace cherries and walnuts (optional)

    1. Preheat oven to 180 C / Gas 4.
    2. Beat 200g sugar with margarine until fluffy. Sift all dry ingredients together. Add eggs to the sugar and margarine one by one, then add the sifted dry ingredients, vanilla and brandy.
    3. Spoon mixture into a well greased baking dish or cake tin of your choice. You may wish to line it with baking parchment.
    4. Bake in the preheated oven for approximately 45 minutes, till a skewer inserted in the centre comes out clean.
    5. When thoroughly cool, remove from the tin and cut across though the middle, lengthways.
    6. To make the syrup: Boil water and sugar for 10 minutes. Cool and add the milk.
    7. To make the cream topping: Whip cream together with sugar and vanilla.
    8. Sprinkle the bottom layer of cake with syrup and cover with the whipped cream. Sprinkle the top piece of cake with syrup and put it on top of the cream.
    9. Cover the whole cake with the rest of the cream (you can add some cocoa if you want to give it the chocolate colour) and decorate with the cherries a walnuts if desired.
