    About this recipe: An easy peasy recipe that results in moreish chicken and spinach bite-sized balls, great for dipping. I came up with this recipe when all I had in the freezer was a packet of frozen spinach and a packet of chicken mince. Incredibly simple, but now a favourite in our house.

    Serves: 4 

    • 250g frozen spinach, thawed
    • 1 egg
    • 500g chicken mince
    • 60g plain flour
    • 2 tablespoons oil
    • half a jar of curry paste of your choice
    • 1 can (400ml) of coconut milk
    • 1 tspn chicken stock

    1. In a bowl, mix thawed spinach, egg and chicken mince and mix. Roll into small balls and dip in flour.
    2. Heat oil in frying pan and brown balls.
    3. Remove meatballs from pan and cook curry paste for approximately 2 minutes, then stir in coconut milk and chicken stock.
    4. Add meatballs back into sauce mixture, simmer with lid on for approximately 30 minutes.
    5. Serve over rice.
