Apple carrot bran muffins

    These apple and carrot bran muffins are full of whole grains and seeds, and are a great way to start the day and get the metabolism working. Use a variety of seeds, such as flax, sesame, pumpkin, etc. You can use oil instead of margarine, if desired.

    Ingredients
    Serves: 8 

    • 75g wheat bran
    • 4 tablespoons oat bran
    • 125g plain flour
    • 100g dark brown soft sugar
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 2 teaspoons ground cinnamon
    • 70g sultanas
    • 5 tablespoons mixed seeds and/or chopped nuts
    • 1 medium carrot, grated
    • 1 large apple, grated (with peel)
    • 5 tablespoons light margarine spread
    • 1 egg, beaten
    • 350ml skimmed milk

    Method
    Prep:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Mix the dry ingredients together (first 9 ingredients listed).
    2. Add the apple and carrot and coat with the flour mixture.
    3. Melt the margarine in the microwave for 30 seconds and pour over the other ingredients. Stir in just a little.
    4. Beat egg and milk together and pour over other ingredients. Mix with a spoon until just combined.
    5. Let the mixture sit for a few minutes so that bran can soak up some of the milk.
    6. Use a heaped spoonful of mixture for each muffin into your greased muffin tin.
    7. Bake at 180 C / Gas 4 for about 15 minutes.
    8. Serve plain or with margarine spread and/or jam.
