White Christmas

    White Christmas is an Australian Christmas tradition. It looks like a white chocolate sweet, but is actually made with a combination of powdered milk and copha. Copha is the brand name of a form of solid vegetable fat made from hydrogenated coconut oil. You can find it in specialty shops and online.

    Serves: 6 

    • 90g rice krispies
    • 150g mixed fruit
    • 90g dessicated coconut
    • 130g dried powdered milk
    • 90g icing sugar, sifted
    • 225g Copha
    • drop of vanilla extract

    Prep:10min  ›  Cook:10min  ›  Extra time:2hr chilling  ›  Ready in:2hr20min 

    1. Put 90g rice krispies, 150g mixed fruit, 90g dessicated coconut, 130g dried powdered milk and 90g icing sugar in a bowl.
    2. Melt 225g Copha in saucepan. Add Copha to dry ingredients in bowl and mix well.
    3. Press mixture firmly into a tin. Set in a refrigerator. Cut into squares.

    Used different ingredients. i personally dont like all the fruits that come in mixed fruits so i just added cherries, nuts and marshmallows instead..kinda like a rocky road.  -  20 Dec 2009  (Review from Allrecipes AU | NZ)
