About this recipe:This omelette recipe is something I whip up quickly after a tiring day. Great with crusty bread. I omit the egg yolks to save on fat and calories, but you can keep them in if you want a traditional omelette.
2 rashers bacon, chopped
1/2 courgette, sliced
1/2 red pepper, sliced

Sauté bacon for a few minutes over medium high heat. Add the vegetables and saute for a further few minutes. They should still be slightly crisp.
Whisk the egg whites in a bowl and season to taste. Add to the vegetable mixture and lower the heat to medium or medium low. Cook until opaque and season with salt and pepper to taste.
