Light bacon, courgette and pepper omelette

    This omelette recipe is something I whip up quickly after a tiring day. Great with crusty bread. I omit the egg yolks to save on fat and calories, but you can keep them in if you want a traditional omelette.

    Serves: 1 

    • 2 rashers bacon, chopped
    • 1/2 courgette, sliced
    • 1/2 red pepper, sliced
    • 2 egg whites
    • salt and pepper

    1. Sauté bacon for a few minutes over medium high heat. Add the vegetables and saute for a further few minutes. They should still be slightly crisp.
    2. Whisk the egg whites in a bowl and season to taste. Add to the vegetable mixture and lower the heat to medium or medium low. Cook until opaque and season with salt and pepper to taste.

    Think that now Diet trends have moved on it is safe to add that most agree nothing wrong with the yolks and no problem with diet.  -  03 Apr 2012
