About this recipe:This is one of the cheapest, easiest and quickest suppers to prepare. Rice is layered with a mix of bacon, spinach, olives and breadcrumbs, then topped with tomatoes and cheese and baked till bubbly.
550g medium-grain rice
2 tablespoons olive oil
300g bacon, diced
200g frozen spinach, thawed
70g pitted and diced black olives (optional)
400g tinned chopped tomatoes
250g grated cheese

Preheat oven to 170 C / Gas 2.
Boil the rice according to packet instructions and set aside.
Heat the oil and brown the diced bacon in a saucepan (drain excess dripping if any). Off the heat, mix the bacon together with the spinach, olives, breadcrumbs and beat the eggs in. Mix well. Arrange rice and the bacon mixture in layers in a greased deep baking dish. Then finish with the tomatoes on top and sprinkle with grated cheese. Bake for 15-20 minutes or until cheese is golden brown.
Serve with a green salad or steamed veggies. Enjoy!
You can use chopped fresh tomatoes instead of tinned, if desired. You can also use fresh spinach - simply saute it briefly till wilted before adding it to the mix.
