Banana Toastie

    I'm not sure if this classifies as a 'recipe'... But the end result is my favourite winter breakfast. Also makes for a fab and healthy snack after school. You can use cream cheese instead of the ricotta cheese, if desired.

    Ingredients
    Serves: 1 

    • 1 small banana, thinly sliced
    • 2 slices crusty bread, or 1 ciabatta roll
    • 1 tablespoon light ricotta cheese (optional)
    • 1 pinch cinnamon, or to taste

    Method
    Prep:2min  ›  Cook:3min  ›  Ready in:5min 

    1. Lightly spread ricotta over each slice of bread. Top one slice with banana slices.
    2. Cut up banana into relatively small/thin slices and spread over one of the slices of bread.
    3. Sprinkle the cinnamon, put bread together and toast in a panini press or on the grill!
