About this recipe:I'm not sure if this classifies as a 'recipe'... But the end result is my favourite winter breakfast. Also makes for a fab and healthy snack after school. You can use cream cheese instead of the ricotta cheese, if desired.
1 small banana, thinly sliced
2 slices crusty bread, or 1 ciabatta roll
1 tablespoon light ricotta cheese (optional)
1 pinch cinnamon, or to taste

Lightly spread ricotta over each slice of bread. Top one slice with banana slices.
Cut up banana into relatively small/thin slices and spread over one of the slices of bread.
Sprinkle the cinnamon, put bread together and toast in a panini press or on the grill!
