About this recipe:These beef patties are easy and cheap to make and a great way to get your kids to eat veg. Versatile, too - you can serve them as burgers, in a pitta wrap, over rice or even over pasta with tomato pasta sauce. They are crunchy on the outside and moist on the inside.
500g beef mince
1/2 courgette, grated
2 carrots, grated
3 slices stale bread, crumbled
2 tablespoons cayenne pepper, or to taste
salt and pepper to taste
150g grated cheese
60g rice flour
1 tablespoon vegetable oil

Mix together all ingredients except the rice flour and oil.
Make into golf ball-sized balls and flatten to 1cm in thickness. Coat in the rice flour and fry with the oil in a large pan at medium heat.
Drain on a piece of kitchen paper and serve with rice or as a burger.
Refrigerate for one hour after all the ingredients are mixed for the flavour to really come out.
