Easy Beef and Veg Patties

    These beef patties are easy and cheap to make and a great way to get your kids to eat veg. Versatile, too - you can serve them as burgers, in a pitta wrap, over rice or even over pasta with tomato pasta sauce. They are crunchy on the outside and moist on the inside.

    Serves: 12 

    • 500g beef mince
    • 1/2 courgette, grated
    • 2 carrots, grated
    • 3 slices stale bread, crumbled
    • 2 tablespoons cayenne pepper, or to taste
    • salt and pepper to taste
    • 150g grated cheese
    • 1 egg
    • 60g rice flour
    • 1 tablespoon vegetable oil

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Mix together all ingredients except the rice flour and oil.
    2. Make into golf ball-sized balls and flatten to 1cm in thickness. Coat in the rice flour and fry with the oil in a large pan at medium heat.
    3. Drain on a piece of kitchen paper and serve with rice or as a burger.


    Refrigerate for one hour after all the ingredients are mixed for the flavour to really come out.
