Two-in-One Chocolate Chip Cookies

    This is a versatile recipe that has been an absolute hit with everyone. My hubby loves the biscuits with the plain chocolate chips whilst I love the chocolate cookies with the 'energy mix'. The great thing is that you get two varieties of cookies from one easy recipe. A sure hit with everyone!

    Ingredients
    Serves: 10 

    • 250g butter
    • 220g dark brown soft sugar
    • 160g caster sugar
    • 2 teaspoons vanilla extract
    • 2 eggs, beaten
    • 375g wholemeal self-raising flour
    • Version 1
    • 175g plain chocolate chips
    • Version 2
    • 5 tablespoons cocoa
    • 175g 'energy mix' of sunflower seeds, pumpkin seeds, sultanas and flaked almonds

    Method

    1. Preheat oven to 170 C / Gas 3.
    2. Cream butter, dark brown soft sugar and caster sugar until light and fluffy. Add in vanilla and eggs. Stir in the flour.
    3. Split dough into 2 lots.
    4. Version 1: Add in plain chocolate chips. Mix well.
    5. Version 2: Add in cocoa and 'energy mix'. Mix well.
    6. Roll teaspoonfuls of mixture into balls and place onto a greased baking tray. Using a fork, flatten the cookies, leaving approximately 1cm between each flattened cookie as it does spread a little. Note that the thinner you press it the crispier it'll be and the shorter the baking time.
    7. Bake for about 10 to 15 minutes or until baked. Leave on tray to cool for about 2 to 3 minutes before removing and putting onto cooling racks to cool completely.
