Crumb coating

    This is a homemade crumb coating recipe that I like because it does not taste like it is mass-produced or shop-bought. Try varying it with your favourite fresh herbs instead of basil and mint. Rosemary is fab for chicken; Chinese five-spice powder is great for fish! Simply roll meat in flour, then into egg wash, then into the coating. Hard cheese such as Parmesan or Pecorino work a treat in this recipe.

    Serves: 4 

    • 6-7 slices bread (stale is best)
    • 2 cloves garlic, peeled
    • 60g grated mature cheese
    • 4 tablespoons fresh basil
    • 4 tablespoons fresh mint
    • salt and pepper
    • 60g plain flour
    • 2 eggs, beaten
    • extra virgin oil for frying

    1. Place bread, garlic, cheese, basil and mint into food processor. Process until very fine crumbs, then add salt and pepper to taste.
    2. Roll meat pieces into flour, shake off excess, dip into egg and then into crumb mixture, pressing firmly to coat meat.
    3. Place meat on plate and refrigerate for at least 1/2 hour to set crumb mixture.
    4. Heat oil in pan and fry meat, turning often, until golden and cooked through.
