Brandy Ice Cream

    This easy brandy ice cream is a family favourite for Christmas Day, and doesn't require an ice cream maker. Serve this with Christmas cakes and puddings as a wonderful alternative to custard. Also heavenly with apple crumble!

    Serves: 6 

    • 4 eggs, separated
    • 300ml double cream
    • 1 teaspoon vanilla extract
    • 100g caster sugar
    • 2 tablespoons brandy

    1. Whisk the egg whites on fast speed, using an electric whisk, until a light meringue.
    2. Beat in the sugar gradually, still on a fast speed, until the mixture thickens. Fold in the egg yolks.
    3. Whisk the brandy, vanilla and cream until thick. Fold into the meringue mixture.
    4. Freeze in a flat container overnight, for at least 12 hours.
