This simple Maltese dish is a tasty meat and pasta soup which is tomato based. It's a hearty and warming one-pot that is fantastic for dinner on a cold winter's night. Leftovers are fantastic the next day.

Ingredients
Serves: 8
- 2 carrots, chopped
- 2 onion, chopped
- 2 sticks celery (including leaves), chopped
- 750g lean rump steak, cubed
- 3-4 potatoes, peeled and quartered
- 100ml extra virgin olive oil
- 2 tablespoons tomato puree (more if you like)
- 1 stock cube
- 300g risoni pasta (or other tiny pasta shape)
- salt and pepper to taste

- Add up to 4 litres water in a pot over high heat. Add the chopped carrots, onion, celery and potatoes. Add the cubed steak. Bring to the boil.
- Add the olive oil, tomato puree and the stock cube once the mixture is at the boil. Reduce heat and cook on a slow simmer for 2 hours or until veggies are soft.
- Add salt and pepper to taste.
- When all the veggies are soft, add the risoni pasta, and boil till al dente. Serve with some crusty bread and enjoy.
Risoni pasta
Risoni pasta is also known as orzo, a small rice-shaped pasta. You can use any other small pasta shape for this dish, such as stellete.
