About this recipe:This easy peasy chicken recipe gives you a taste of the Caribbean without the jet lag. Chicken is simmered in a distinctive tomato sauce, flavoured with chilli, allspice, lemon, sultanas, banana and mango. Best served over rice.
1kg chicken fillets (breast or thigh)
400g tinned mango slices, drained
1 firm banana
1 tablespoon vegetable oil
800g tinned chopped tomatoes
1-2 chillies, chopped
1 tablespoon dark brown soft sugar
1/2 teaspoon allspice
1 tablespoon lemon juice
4 tablespoons sultanas

Cut chicken, drained mangoes and banana into bite size pieces. Heat oil in frying pan, add chicken and cook over medium heat till brown, about 5 minutes.
Remove chicken from pan and set aside. Add tomatoes, chilli, dark brown soft sugar, allspice, lemon juice and sultanas and cook over medium heat for 3 minutes. Return chicken and cook till chicken is cooked through, approximately 5 minutes. Add mangoes and bananas and warm through.
