Chicken Calypso

    This easy peasy chicken recipe gives you a taste of the Caribbean without the jet lag. Chicken is simmered in a distinctive tomato sauce, flavoured with chilli, allspice, lemon, sultanas, banana and mango. Best served over rice.

    Serves: 4 

    • 1kg chicken fillets (breast or thigh)
    • 400g tinned mango slices, drained
    • 1 firm banana
    • 1 tablespoon vegetable oil
    • 800g tinned chopped tomatoes
    • 1-2 chillies, chopped
    • 1 tablespoon dark brown soft sugar
    • 1/2 teaspoon allspice
    • 1 tablespoon lemon juice
    • 4 tablespoons sultanas

    1. Cut chicken, drained mangoes and banana into bite size pieces. Heat oil in frying pan, add chicken and cook over medium heat till brown, about 5 minutes.
    2. Remove chicken from pan and set aside. Add tomatoes, chilli, dark brown soft sugar, allspice, lemon juice and sultanas and cook over medium heat for 3 minutes. Return chicken and cook till chicken is cooked through, approximately 5 minutes. Add mangoes and bananas and warm through.
    3. Serve over a bed of rice.
