Using a pastry cutter, cut out rounds of shortcrust pastry and place in a muffin tin. I tend to wipe each mould with a little butter, but that isn't essential.
Place a slice of cheese inside each pastry case, then top with a slice of tomato. Sprinkle the whole lot with some black pepper to taste.
Bake in a 200 C / Gas 6 oven until cheese is bubbly and pastry is cooked, about 10-15 minutes. Enjoy warm.
