Chicken, Broccoli and Cheddar Bake

    A fantastically cheesy chicken recipe that is a fantastic way to get your kids to enjoy their green veg! This has all the right tastes for the whole family, is easy to prepapre and budget friendly, and will have everyone wanting leftovers!

    Serves: 6 

    • 2 chicken breast fillets
    • 1 large broccoli
    • 1 tin chicken soup
    • 1 large tub soured cream
    • 300g grated Cheddar cheese
    • 2 tablespoons curry powder

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 C / Gas 4. Chop chicken breasts into slightly smaller pieces, place in a saucepan and boil in water (or chicken stock if desired).
    2. Meanwhile, cut broccoli into small florets, and make an even layer in the bottom of a baking dish. Combine soured cream, chicken soup and curry powder in a bowl.
    3. Once chicken is cooked, add an even layer to the baking dish. Pour soured cream mixture over the top, and finally, sprinkle with cheese. Bake for 40 minutes, or until cheese is golden.

    Use for leftovers

    Tastes even better the next day for lunch!

    we tried this becuase we fancied doing something different with chicken but i have to say the 2 spoons of curry powder completley took over every other flavour  -  27 Oct 2012


    Loved this. Easy and totally delicious. I thought the two tablespoons of curry powder seens too much so I put in 1 dessert spoon  -  13 Dec 2011


    I didn't have any chicken soup in the cupboard at the time I first made this recipe. Replaced the soup with liquid chicken stock which, of course, made it far too liquid. Was probably the best ever soup I have ever made. Look forward to trying the original recipe. If it is as good as my soup then I will be very happy.  -  16 Apr 2013  (Review from Allrecipes AU | NZ)
