Chocolate Cherry Royales

    This easy recipe results in delicious chocolate cherry balls with a hint of crunch, thanks to crushed Nice biscuits. These are great to give as food gifts, or to have on hand for unexpected guests over the festive season.

    Ingredients
    Serves: 10 

    • 2 tablespoons margarine
    • 200g cooking chocolate
    • 250g Nice biscuits, crushed
    • 125g glace cherries, chopped
    • 1 teaspoon cherry brandy essence
    • 90g dessicated coconut
    • 1 (397g) tin condensed milk

    Method

    1. Melt the margarine and cooking chocolate together in a saucepan.
    2. Combine the crushed Nice biscuits, chopped cherries, cherry brandy essence, coconut and condensed milk in a large bowl and mix together.
    3. Shape the mixture into small, bite-sized balls.
    4. Dip these balls into the melted chocolate mix and set on a tray.
    5. Place the tray in the fridge until the chocolate on the outside has hardened.

    Cherry brandy essence

    Look for cherry brandy essence online or in specialty shops. In a pinch, substitute for cherry brandy, cherry essence or rum.
