Stuffed chicken breast

    This is the easiest stuffed chicken breast recipe you'll find. Use your favourite packet of stuffing mix to stuff chicken breast fillets, then cook in a parcel in boiling water. If you like it browned, simply brown in some butter after poaching.

    Serves: 3 

    • 3 chicken breasts
    • 1 packet of stuffing mix
    • aluminium foil
    • cling wrap

    1. Put a pan of water on to boil. Make up the packet of stuffing according to its directions.
    2. Slice chicken breast in half horizontally, but not all the way, and hit it with a wooden spoon to flatten.
    3. Spread the stuffing across the sliced breast. Roll the chicken up. Wrap it tightly in cling wrap then foil over the top of that.
    4. Drop the breasts in the boiling water for 20 minutes.
    5. Pull them out with metal tongs and unwrap and slice like you would slice a loaf of bread.
    6. If you want it brown, just put in the frying pan to brown all sides.
    7. Serve with some veg and potato. Enjoy!
