About this recipe:This is my mum's recipe, which I now do in the slow cooker. Very easy for people who are busy working or just everyday Mums. I always roll the chicken in flour before putting in the pot. You can use chicken breasts instead of thighs, if wished.
1 litre chicken stock
1 tablespoon horseradish mustard
1/4 teaspoon pepper
4 boneless chicken thighs
225g fresh mushrooms, halved
150g sliced carrots
150g sliced leeks
2 tablespoons water
2 tablespoons cornflour

Place all ingredients into the slow cooker and leave on Low for 8 hours. Just before serving turn on High and thicken with water and cornflour if needed.
