Chicken mushroom ragout

    This is my mum's recipe, which I now do in the slow cooker. Very easy for people who are busy working or just everyday Mums. I always roll the chicken in flour before putting in the pot. You can use chicken breasts instead of thighs, if wished.

    Ingredients
    Serves: 2 

    • 1 litre chicken stock
    • 1 tablespoon horseradish mustard
    • 1/4 teaspoon pepper
    • 4 boneless chicken thighs
    • 225g fresh mushrooms, halved
    • 150g sliced carrots
    • 150g sliced leeks
    • 2 tablespoons water
    • 2 tablespoons cornflour

    Method
    Prep:10min  ›  Cook:6hr  ›  Ready in:6hr10min 

    1. Place all ingredients into the slow cooker and leave on Low for 8 hours. Just before serving turn on High and thicken with water and cornflour if needed.
