Garlic Chilli Prawns

    A simple and effortlessly tasty recipe for prawns flavoured with red chilli, garlic, white wine and tomato. The sauce can be made ahead and kept in the fridge or freezer till needed. Frozen raw unpeeled prawns are quick, easy and convenient for this recipe.

    Serves: 4 

    • 4 tablespoons olive oil
    • 1 onion, finely chopped
    • 6 cloves garlic, crushed
    • 2-4 hot red chillies, sliced
    • 1 tablespoon tomato puree
    • 125ml white wine
    • 1 (400g) tin chopped tomatoes, pureed
    • 1 teaspoon sugar
    • salt and pepper to taste
    • 1kg fresh raw king prawns
    • 60g breadcrumbs
    • 1 bunch parsley, finely chopped

    1. Heat oil in a large pot that has a lid. Add onion, garlic and chillies; saute until onion is transparent.
    2. Add tomato puree and cook for 1 minute. Add wine, bring to the boil and allow to reduce slightly.
    3. Add tomatoes, sugar and seasoning; simmer 5-10 minutes. (sauce can be placed in fridge at this stage until required).
    4. Add prawns, breadcrumbs and 3/4 of the parsley; mix well. Cook with lid on until prawns are all golden-red in colour.
    5. Garnish with remaining chopped parsley and serve.
