Double Chocolate Oat Cookies

    Delicious chocolaty cookies made with chocolate chips, grated milk chocolate and chopped nuts. Oats are blended to a fine powder, replacing some of the flour and adding a lovely texture to these moreish cookies.

    Serves: 20 

    • 375g oatmeal
    • 250g butter, softened
    • 150g dark brown soft sugar
    • 220g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 375g chocolate chips
    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 block (250g) milk chocolate, grated
    • 185g chopped nuts

    1. Blend the oatmeal in a blender till it's a fine powder.
    2. In a large bowl, cream the butter and both sugars. Add the eggs and vanilla, then add the flour, oatmeal, salt, baking powder and bicarb of soda.
    3. Stir in the chocolate chips, grated chocolate block and nuts, if using.
    4. Roll into balls, and place 5cm apart on a baking tray.
    5. Bake for 10 minutes at 180 C / Gas 4

    These biscuits are amazing! Really chewy and tasty, although I didn't quite stick to the recipe as I ran out of oatmeal so used oats instead and also only had 100g chocolate.  -  26 Mar 2011
