Chocolate, oat and nut cookies

    These cookies are irresistible - the best of all worlds. You can use almost any nut you would like. The recipe is perfect for a cake sale or special occasion, as it makes such a large batch. You can freeze the cookies with great success, however.

    Serves: 70 

    • 250g butter
    • 220g caster sugar
    • 150g dark brown soft sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 250g plain flour
    • 180g porridge oats
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 250g chopped nuts (peanuts or macadamias are good)
    • 375g plain chocolate, roughly chopped

    1. Preheat the oven to 190 C / Gas 5.
    2. Cream softened butter and sugars. Add eggs and vanilla and beat until mixed.
    3. Add the flour, oats, baking powder and bicarb and mix well. Mix in nuts and chocolate with wooden spoon.
    4. Take a teaspoon or tablespoon at a time and roll into balls. Place about 5cm apart on a greased oven tray. Press down lightly with a spatula.
    5. Bake for 10 minutes or until golden brown.
    6. Lift off tray carefully and cool on rack. Store in an airtight container.


    Depending on the size you can get 60-80 biscuits out of this recipe.
