Boxing Day Turkey Baskets

    These pastry baskets are a light and healthy finger food at either Boxing Day or Christmas parties. A great way to use up leftover roast turkey! Being the colours of Christmas, they are always a hit! You can use filo pastry instead of spring roll wrappers; simply cut the pastry into 10cm squares.

    Serves: 12 

    • 1 packet spring roll wrappers
    • vegetable oil, for greasing
    • 500g cooked, diced turkey breast
    • 100g mayonnaise
    • 3 spring onions, chopped finely
    • 2 avocados
    • cranberry sauce

    1. Lightly oil a muffin tin. Place two spring roll wrappers across each other to make a star shape and press into muffin tin. Lightly brush insides with oil.
    2. Bake in a preheated 200 C / Gas 6 oven for 3-4 minutes until golden. Remove to cool on wire rack; repeat until all wrappers used. If not using immediately, store in an air tight container.
    3. When ready to serve layer - in order - a spoonful of chopped turkey breast, a teaspoon mayo, spring onion, chopped avocado then a teaspoon of cranberry sauce on top.
    4. Best consumed within an hour to avoid going soggy!
