About this recipe: Yes, honey and cinnamon may be common ingredients, but here they come together for an uncommonly delicious ice cream. This is a wonderful ice cream to serve alongside apple crumble or apple pie.


Serves: 12 

  • 500ml milk
  • 200ml honey
  • 1 teaspoon cinnamon
  • pinch salt
  • 2 eggs, beaten
  • 500ml double cream
  • 2 teaspoons vanilla

  1. Heat milk in two litre saucepan over medium heat but do not boil; stir in honey, cinnamon and salt.
  2. Gradually pour about 125ml hot milk into eggs and beat with whisk; pour eggs into saucepan with remaining milk mixture.
  3. Cook and stir over medium-low heat 5 minutes (mixture should thicken slightly).
  4. Cook to room temperature. Stir in cream and vanilla. Refrigerate overnight or until cold.
  5. Freeze in ice cream maker according to manufacturer's directions.
